I'm really glad to be focussing on quality of life again, not just in terms of comfort and beauty, but in terms of healthy food and exercise. In the last three years since my daughter died my life has, first, been about survival, and second, been about easing the pain. Any real concerns about health have only just been returning to my consciousness.
I was glad to read about using honey as a sugar substitute in the local MayDay magazine recently put out by the Sky Dragon centre on King William Street here in Hamilton, Ontario. Better still, the article says, is unpasteurized honey. Knowing that I don't process sugar well, or any quickly digesting carbohydrates for that matter, I decided to give it a try and see if I could tell the difference. I'm quite pleased to say that I can!
I bought some regular slow cooking oatmeal ( much cheaper and healthier than the heavily sugared and chemical laden instant kind) and cooked according to the instructions, added some cinnamon I ground fresh myself (so proud! LOL) and some of the unpasteurized honey to sweeten. It was very nice. It may sound funny but I don't know how else to put it other than to say it tasted like 'real food'. Just as there's a huge difference between a can of soup and home made soup.
I came across an article somewhere about infusing honey with herbs and spices. I'm definitely going to try that too. I would love to have a few jars of infused honey around: cinnamon infused honey for the oatmeal, and chamomile infused honey for the tea, vanilla infused honey for the coffee....hey the list goes on!
